No Bake Love Bites, I Mean Cheesecake Bites

Cream Cheese is one of the most versatile ingredients in the fridge. It has a great texture, mild flavor and can be used in both savory and sweet dishes. Here’s one of the easiest little no bake treats you can make with it.

Cream Cheese Bites

  • 16 ozs cream cheese
  • 1/4 C powdered sugar
  • 1/2 C Almond Meal (I’m sure you could use any kind of nut meal or even nut flour)
  • 1/4 tsp vanilla extract or flavoring
  • 2 tsp orange zest
  • 1/2 C crushed graham crackers
  • 1 T cinnamon  sugar (I keep a mix in a jar for toast, so I just used a T of this)

Use a mixer! Mix together all ingredients except the graham crackers and cinnamon sugar, let it chill for about 15 minutes.  While cream cheese mixture  is chilling, crush up your graham crackers and mix it in a bowl with the cinnamon sugar. Make bite sized portions of the cream cheese mixture, roll them in the graham cracker, cinnamon sugar mixture and shape them into whatever shapes you want. I made squares so they would stack, but you could also press them into a mold, or leave them in balls.  It’s best to chill them for another 10-15 minutes before serving since the rolling and molding soften up the cream cheese a bit. Enjoy!
